Winemaking
The grapes are harvested with a sugar gradation of 20°. The three grape varieties are processed together from the beginning. The classic «saignée» method is used: The must remain in contact with the mash for a short time. The subsequent fermentation takes place in steel tanks at a controlled temperature of 26°C. Incidentally: The sugar gradation and the fermentation temperature give the wine its name.
Our tasting note
The latest creation from the house of Elena Walch shines in a delicate raspberry pink. Open-hearted nose of raspberries and strawberries accompanied by a fine citrus note. On the palate, it delights with liveliness, freshness, great balance and a wonderful drinking flow. Excellent as an inviting aperitif, but also with light starters and main courses.

Winemaking
Grechetto grapes grow on clayey soil at an altitude of 215 to 230 m. They are harvested by hand and pressed at a temperature of around 10°C, after which fermentation takes place at low temperatures with selected yeasts.
Our tasting note
The Costa Ovest shines bright golden yellow and gives off a floral bouquet combined with ripe yellow fruits. The palate is once again dominated by floral notes with hints of tropical fruit. Complex, structured and well-balanced.

Winemaking
The grapes are processed with gentle pneumatic pressing with dry ice and using cold decanting of the must in the cellar. Fermentation takes place in a steel tank over 5 months and the wine is then stored in the bottle for a further two months.
Our tasting note
Brilliant straw yellow with hints of green. Very complex, floral and mineral on the nose, with notes of pear, some bergamot, ripe citrus fruits and honey, combined with a fine spiciness. Invitingly refreshing on the palate. Very juicy and melt-in-the-mouth, always elegant. The notes from the nose are repeated in the mouth. Perfectly integrated and underlying acidity, wonderful texture.

Our tasting note
This Vermentino has a light straw yellow colour with hints of green. On the nose, it instantly gives off a floral fragrance accompanied by exotic notes, such as pineapple and cinnamon. On the palate, mature fruity aromas of greengage - the queen of the plums - and a creamy well- integrated acidity. Lingering mineral after-taste.

Winemaking
Exultet is an elegant, precise interpretation of Fiano di Avellino – a cru made exclusively from grapes grown in a single vineyard in Lapio. The vines grow on mineral-rich soils, which give the wine its signature freshness and depth. After harvest, the wine ages for eight months on fine lees: 70% in stainless steel tanks, 30% in small oak barrels. This subtle oak influence imparts elegance, complexity, and structure to Exultet without overshadowing the varietal character.
Our tasting note
Clear, bright yellow with greenish highlights. On the nose, fresh mineral notes emerge alongside ripe peach and a hint of lime. On the palate, the wine reveals its full class: a silky, multi-layered composition of green apple, citrus fruits, yellow blossoms, and exotic aromas. Precise acidity, fine minerality, and remarkable purity elevate this Fiano to an exceptional level – a profile rarely found in Southern Italy. Exultet stands for naturalness, balance, and stylistic finesse. The finish is salty, mineral-driven, and sustained by long-lasting, fresh tension.

Winemaking
The vineyard's soil is characterised by white clay. The harvest takes place by hand with strictly selective selection of the grapes. After gentle pressing, the must ages for 24 months in cement tanks, followed by three months of bottle maturing.
Our tasting note
L'Artigianale glows a pale yellow with greenish reflections. Delicate aromas of fruit on the nose with apple and lemon, as well as mineral notes. The wine reveals its full characte ristics on the palate: crisp acidity, extensive complexity and minerality, followed by a long- lingering finish.
