Elena Walch
Elena Walch is a leading vineyard in South Tyrol under family proprietorship. Encouraging quality and innovation, Elena Walch stood at the head of the quality revolution in South Tyrol and has gained local and international esteem for her efforts. The great assets of Elena Walch are the two vineyards Vigna Castel Ringberg above Kalterer See, and Vigna Kastelaz above Tramin. All wines bear the clear signature of their producer and delight with their purity of taste, elegance and finesse. Elena Walch, formerly a successful architect, al so understands her current profession brilliantly. Responsibility for the family company has now been placed in the hands of daughters Julia and Karoline Walch, as the fifth generation of the family.

Winemaking
The grapes are gently pressed after harvesting. The fresh must is statically clarified at low temperatures and then fermented in steel tank at a controlled temperature of 20°C. The young wine matures for several months in steel tank on its fine lees.
Our tasting note
The Pinot Grigio captivates with bright straw yellow as well as with fruity notes of ripe pears, white pepper and some sage in the nose. Mineral-salty richness, juicy acidity as well as a persistent finish characterize the palate. A wine with backbone and an excellent food companion.

Winemaking
After gentle pressing and static clarification, the fermentation takes place at a controlled temperature of 20 °C and long yeast contact after fermentation. 15 percent of the Chardonnay is fermented in French oak barriques and matures for 5 months. The assembling takes place in spring.
Our tasting note
The Chardonnay Cardellino has an intensive straw-yellow colour. Ripe exotic fruits, some lime-tree blossoms and honey give the wine its complex nose. The Chardonnay is full-bodied and structured, juicy and harmonious with a subtle softness. With a long and elegant finish.

Winemaking
Part of the grapes is fermented after the soft pressing and static decantation in a steel tank at a controlled temperature of roughly 18°C. 15 percent of the wine is fermented in French Allier oak barriques followed by a malolactic fermentation process. The wine is assembled in the spring.

This Sauvignon Castel Ringberg has a dense, strong straw- yellow colour. Fruity aromas of gooseberries and papaya and floral notes of elderflower dominate the bouquet. Wonderfully harmonious on the palate with pleasant freshness, an invigorating structure, elegant richness and juicy mineral finish.

Winemaking
Gentle pressing, static clarification. Fermentation at a controlled temperature of about 20°C. 15 percent of the liquidat this stage is poured into French 'barriques' where it matures for 5 months. Blending takes place in spring.
Our tasting note
Thanks to the altitude of 600 metres above sea level (almost 2000 feet), coupled with intense exposure to sunlight, this 'Kristallberg' Pinot Bianco is multi- faceted and has a great mineral content. With its gleaming yellow straw colour, its bouquet is reminiscent of fresh, green apples and white peach. It reflects elegance and freshness, youth and vitality. An inviting, fine acidic interplay with an ultra-smooth texture, finely structured tannin and harmoniously absorbing length on the finish.

Winemaking
Late harvest, soft pressing and static clarification. Fermentation takes place exclusively in Allier barriques. Once this process is complete, the lees are stirred once weekly for three months. The wine is aged for ten months in barriques on the fine lees, followed by a longer period of bottle ageing. The wine is only available for purchase two years after the harvest.

Chardonnay Riserva Castel Ringberg exhibits a fresh golden yellow and delivers a bouquet characterised by a variety of aromas: Dense and complex with exotic fruits including papaya, spicy with roasted almonds, and with a hint of dandelion honey. The wine impresses on the palate with a unique interplay of freshness and power, an elegant structure, a juicy, mineral vein paired with creamy richness, plenty of harmony and a long, refreshing finish.

Winemaking
As soon as the Chardonnay is at the peak of its ripeness, the different classic vine types are harvested. The particular thing about the vinification is the joint pressing of the grapes and fermenting them in French barriques. Following fermentation, they are then stirred weekly for 3 months (battonage). Following 10 months of maturing in barriques, the wine is stored for at least 6 months in bottles.

A brilliant and intensive yellow characterises the white cuvée wine Beyond the Clouds. This wine has a nose of exotic fruits, as well as a soft richness in combination with fantastic freshness. A fantastically delicious cuvée with good ripening potential. Perfect barrique maturing, without dominating the subtle fruit aromas.
