Freshwater catfish fillet with beetroot risotto

The Wirtshaus zur Markthalle in Zofingen presents a freshwater catfish roasted on beetroot risotto accompanied by a green sauce and beetroot crisps.

 

Ingredients for 4 servings

 

Beetroot risotto

1 Onion

1 Clove of garlic

300 g cooked beetroot

200 g risotto rice

2 dl white wine

4 dl vegetable stock

Cream

Grated parmesan

Salt

Pepper

 

Beetroot crisps

1 Raw beetroot

Flour

 

Freshwater catfish fillet

600 g catfish fillet

Salt

Lemon juice

Worcester Sauce

Flour

Clarified butter

 

Green sauce

100 g shallots

1 Bay leaf

1 dl dry white wine

50 g peas

A Handful of herbs (parsley, chervil, marjoram, thyme)

3 dl full cream

Salt

Pepper

 

For the beetroot purée, wash the beetroot well before cooking and then rub off the skin with a knife. Then purée the beetroot.

 

For the risotto, sauté the onions in butter and then add the risotto rice and sauté until translucent. Then deglaze with white wine.

Add the beetroot purée and gradually pour in the vegetable stock until the risotto is cooked to perfection.

Refine with cream and parmesan and season with salt and pepper.

 

For the beetroot crisps, first peel the beetroot and then cut into fine slices. Dust the beetroot slices with flour and then deep-fry them in the frying oil. Drain the crisps on paper and salt them a little.

 

For the sauce, reduce the shallots and bay leaf by half in a pan. Then chop the herbs and add to the reduction with the peas and cream and bring to the boil.

 

Blend the mixture well with a hand blender and, depending on the consistency, refine with a little white wine. Finally, season with salt and pepper.

 

Coat the catfish fillets with a little Worcester sauce and dust with flour. Then fry the fillet in clarified butter and season with salt and lemon juice.

To go with the freshwater catfish, Wirtshaus zur Markthalle serves Morellino di Scansano DOCG from Podere 414 in Tuscany.

Tasting note
Intense, rich ruby red. Ripe aromas of black cherries and blackberries on the palate. Full and powerful beginning on the palate, with pleasant spiciness and delicate vanilla notes. A smooth, lingering finish.
