Pumpkin gnocchi

Ingredients for 4 people

- 400 g cooked pumpkin, let drain in cloth overnight

- 200 g cooked potatoes

- 180 g flour

- salt

- pepper

- 1-2 eggs

- little cinnamon

 

Preparation pumpkin gnocchi

Mix all ingredients into a dough and form into long rolls. Cut the rolls into gnocchi.

Cook the gnocchi in salted water and once cooked, toss with brown butter and sage.

 

Garnish

Garnish with some Parmesan crispy bacon and amaretti.

The gnocchi go well with beef tagliata or a venison pepper.

 

To go with the pumpkin gnocchi, the Bever Lodge serves the Lagrein Alto Adige DOC  from Elena Walch in South Tyrol.


Tasting note
The Lagrein has a dense and intense ruby red color with violet reflects.

The multi-faceted bouquet seduces the drinker with subtle herbal aromas, wild berries and sweet cherry in the background. It has distinctive tannins, smooth richness, a playful, rustic elegance and a youthful freshness as well as a juicy, long finish.
