The host couple Baur, from the Restaurant Bicerin in Uster presents:
Mediterranean Chicken Ragout with Lemon Risotto
Risotto
1 onion
50 g butter
200 g Carnaroli rice
2 dl white wine
1.5 dl vegetable stock
Lemon zest and juice
Parmesan Reggiano
Finally, add the lemon zest and juice. Season with salt and stir in Parmesan until the desired creamy consistency is achieved.
Chicken Ragout
500 g chicken thighs
1 onion
1 garlic clove
1 zucchini
1 red bell pepper
2 tomatoes
Olives black
2 dl red wine
1.5 dl vegetable stock
Rosemary, thyme, oregano
Let the chicken simmer gently for 40 minutes. If needed, add some vegetable stock. Taste and adjust seasoning.
