Winemaking
The vines thrive at around 250 meters above sea level on limestone-rich soils interspersed with rock, marl, red silt, and gravel. Their east and southeast orientation allows for optimal exposure to the morning sun. The "Clos Solon" parcels particularly benefit from deep soils with a high marl content, which enhances the wine's fruit expression and finesse. In contrast, the gravelly soils of «Bas Cheneverys» provide structure and power. Sustainable cultivation methods, such as vegetative ground cover in «Clos Solon» and the use of natural fertilizers in Porroux, aim to highlight the depth of the terroir and regulate the vineyard's microclimate. Vinification is tailored to the conditions of each vintage, with gentle fermentation designed to preserve the wine’s fruit character and elegance. The wine then matures for 16 to 18 months in oak barrels.
Our tasting note
Brilliant ruby-red color. On the nose, it reveals the typical aromas of the Côte de Nuits: delicate notes of small red fruits such as cherries and raspberries, subtly underscored by a hint of violet. On the palate, it impresses with a perfect balance of roundness, vibrant acidity, and fine-grained tannins. It comes across as an elegant and generous wine, with pronounced retro-olfactory fruit, remarkable length, and a full-bodied, lingering finish.

The vines are oriented towards the east and southeast and are situated at an altitude of 250 meters. They grow on clay-limestone soils, and the parcel is located in the "Les Drazey" vineyard. The wine is aged in oak barrels for 16 to 18 months.
Our tasting note
Light ruby color with purplish to garnet hues. Seductive, dense, with a clear aroma of cherries and raspberries, velvety tannins, and a long finish. The wine is well-balanced, very fresh, and reveals the finesse of the great terroir.

Winemaking
In the village of Gevrey-Chambertin, the vineyards are divided into three parcels: the southern parcel, which includes Les Crais and Jouise, and the northern parcel Justice, where the vines are south-facing. The 60-year-old vines are carefully hand-harvested and meticulously sorted on a vibrating table. Maceration begins with whole clusters and takes place in open vats. Fermentation occurs naturally with indigenous yeasts, completely avoiding the use of added sulfur. After pressing, the wine is aged for 18 months in oak barrels (35% new oak). Bottling is done without filtration.
Our tasting note
Sparkling garnet red with violet highlights, the wine reveals an exciting bouquet of red and black berries, wild herbs, licorice, and earthy-fresh notes. On the palate, it is juicy and fruity, delicious and enticing with an abundance of fruit. A pleasant sweetness of red berries, blackcurrant, and black cherry integrates harmoniously with the fine, characteristic minerality and the spicy notes of limestone. The wine is both delicate and playful, yet powerful and complex. Long, lasting finish.

Winemaking
For his Bourgogne Pinot Noir, Xavier Monnot purchases grapes from contract growers in the Côte de Beaune who align with his quality philosophy. The grapes are destemmed to create a charming wine style. After fermentation, the wine is transferred to barrels, about 15% of which are new.

In the glass, the wine shows a bright ruby-red color and reveals a captivating bouquet. Red berries, subtle floral notes, and a hint of earthy nuances form an appealing aroma that highlights the character of Pinot Noir. The estate follows the principles of organic viticulture, with traditional soil cultivation, moderate yields, and the exclusive use of indigenous yeasts.

The color is deep purple, turning ruby red as it ages. The nose opens with a bouquet of small red and black fruits (strawberry, cherry, blackcurrant, blueberry), evolving into cooked plum, peppery and undergrowth notes, moss, and mushrooms. On the palate, it is lively, with a structured, soft, and round finish.
