Elio Grasso
The great Barolista and Grand Seigneur Elio Grasso is a strict and self-critical winemaker from Piedmont. He and his warm-hearted wife Marina and capable son Gianluca are able to produce authentic wines with a strong emphasis on the terroir using 18 hectares of prime sites. He has found his own unmistakable signature with his unique Baroli Gavarini Chiniera and Ginestra Casa Maté , which perfectly master the balancing act between robustness and elegance. The Grasso's consider the work in the vineyard more important than the work in the cellar and rightly feel more like winegrowers than wine makers.

Winemaking
This Barbera is derived from 25 year old vines from the "Vigna Martina" vineyard. Fermentation in steel tanks at a controlled temperature and daily pumping is followed by maturation in French oak barriques. The barriques used are 50% old and 50% new. At least 8 months of bottle-ageing follow.
Our tasting note
Lively ruby red. Fruity aromas of black cherry, cranberry and plum in the nose. Infinitely creamy and balanced on the palate. Powerful fruity aromas of sour cherry and a touch of pomegranate dominate, which are harmoniously enhanced by the wooden finish. Concentrated long-lasting finale.

Winemaking
Gavarini Chiniera is a sub-zone within the Ginestra collecting vineyard. The soil is dominated by chalky, white clay and sand. These soil conditions create the robust, compact and masculine Barolos. After selective manual harvesting in the second half of October, mash fermentation takes place in the steel tank at a controlled temperature for 12 to 16 days. Maturation takes place in large Slavonian oak barrels for 24 months, followed by maturation in a bottle for 8 to 10 months.
Our tasting note
This Barolo shines a lively garnet red in the glass. Accessible, open bouquet with aromas of elderberry, blackberry and a hint of liquorice. On the palate there is then a great deal of dark fruit with aromas of smoke and flint. The after-taste is unbelievably delicate and sensual.

Winemaking
Hand-picked during the first 10 days of October. Then traditional mash fermentation for 7 to 8 days at a controlled temperature with daily recirculation. Some whole grape fermentation for added structure and character. The wine is then aged in steel tanks for 6 months.
Our tasting note
Bright ruby red with garnet hues. Intense red-fruity bouquet with aromas of ripe forest berries and raspberries as well as some plum. Some red and black fruit, liquorice and dried rose petals on the palate. Fine tannins and great length.

Winemaking
The vines for the Chardonnay Educato were planted in the upper most area of the vineyard in 1985, and are therefore in the coolest locations of the Grassos winegrowing area. 50% of fermentation and maturation takes place in barrels, and the other 50% in stainless steel tanks.
Our tasting note
The aroma is amazingly fruity and exotic for a Chardonnay. Green fruit elements of apple and pear as well as exotic notes of apricot, pineapple and white peach. On the palate, the wine presents itself as somewhat dry with juicy, creamy aromas of yellow fruits. The crisp acidity ensures that you can't wait for the next sip. Harmonic, long finish.
