Alin Luta, sales representative at Weibel Weine, recently visited Amia Neo-Brasserie in Zurich. He enjoyed a “venison carpaccio and a leek-onion quiche” accompanied by a glass of Brunello di Montalcino DOCG from Col d’Orcia, while chatting with Elias Renggli (Host), Leonardo Binswanger (Head of Service) and Jonathan Kopp (Sommelier):
What do your customers particularly appreciate about the Amia Neo Brasserie?
Our cuisine is inspired by the classic French brasserie, interpreted in our own way. Some dishes are permanent features on the menu, including our tartare with pommes allumettes – side components such as the mayonnaise are adapted seasonally. Carpaccio is also always on the menu, but varies throughout the year, for example as shrimp, game or fish carpaccio. In addition, we change our menu four times a year, in line with the seasons. Around 80% of our products come from the canton of Zurich, which is why seasonality plays a central role and strongly shapes our cuisine.
Which wines from Weibel Weine are customer favorites?
A clear favourite among our guests is the Brunello di Montalcino from Col d’Orcia.
What is the house specialty? And what makes it special?
One of our signature dishes is the entrecôte from Biohof Scheibler, served with sauce béarnaise, potato gratin and fresh vegetables. Also very popular: our fresh mussels with Belgian-style fries. These dishes reflect our passion for high-quality ingredients and honest, flavour-driven cuisine.
