
Cabernet Franc
The noble French grape variety is overshadowed by its more widely grown blending partner Cabernet Sauvignon. In 1997, DNA analysis proved that Cabernet Franc, together with the Bordeaux white wine grape Sauvignon Blanc, is a parent of the noble Cabernet Sauvignon.
Cabernet Franc is particularly well suited to cooler climates and thrives best on chalky, sandy soil. Unlike the Cabernet Sauvignon vine, Cabernet Franc is lighter in color and lower in tannins than Cabernet Sauvignon. It ages very well and the vegetal note in the bouquet is typical of this grape variety.
Flavors range from dark berries such as black and red currant, raspberry and blackberry, to nutty (almond), spicy (black bell pepper, anise, cumin, sweet paprika, cinnamon) and woody.
Cabernet Franc can also be called a bitchy grape variety. Compared to Cabernet Sauvignon, Cabernet Franc has a stronger growth habit and still requires longer pruning because it produces smaller yields. In addition, its tendency to trickle regularly causes natural yield reductions and the thick-skinned grape variety is susceptible to fungal diseases. In addition, the grape variety has a very small ripening window. To achieve an aromatically ripe and interesting flavor, Cabernet Franc must be harvested at a very specific ripening interval, which is often only a few days.
All the more important is a perfect winemaker's work to achieve a perfect result in the glass at the end.
