Winemaking
The vineyards are on average 35 years old and are managed without fertilizers or herbicides. The harvest is done by hand, and the grapes are sorted and de-stemmed in the cellar. The alcoholic fermentation lasts about 15 days, followed by aging in barrels for 15 to 18 months. Before bottling, the different parcels are blended together.
Our tasting note
Clear ruby red. The nose is dominated by raspberries and small red fruits, with hints of licorice, violets, and a touch of spices and flowers. On the palate, it is medium-bodied with plenty of raspberry fruit, a juicy acidity structure, grainy tannins, and a lightly salty finish. A lively Pinot Noir that presents itself beautifully in its youth.

Winemaking
The grapes from 40- to 50-year-old vines are hand-harvested and then carefully selected on a vibrating table. The vineyard is located to the north of Beaune, with a southern exposure. Maceration begins with whole clusters and takes place in open vats. Fermentation occurs naturally with indigenous yeasts, completely avoiding the use of added sulfur. After pressing, the wine is aged for 18 months in oak barrels (35% new oak). Bottling is done without filtration.
Our tasting note
Bright purple with an intense and exciting aroma of red fruits. A harmonious mix of berries with a pronounced peppery note gives the wine uncompromising intensity. Sweet red cherries and raspberries unfold on the palate, accompanied by a hint of almost chocolate-like nuances. Despite the opulent aromas, the wine remains fresh, elegant, and juicy – a true delight!

Winemaking
The vines grow at a height of 700 - 800 m above sea level in the Biancavilla municipality on the south-west slope of Etna. Traditional mash fermentation over 21 days mainly in cement tanks, followed by 24 months of maturing in large oak casks.
Our tasting note
The wine has a vibrant, ruby red colour. It has red fruit aromas of sour cherry, mulberries and also marzipan. It also has aromas of ripe fruits on the palate. There are also notes of citrus fruits, tomato leaves and oregano. There is a nice mineral length in the finish, with a hint of flintstone.
