Winemaking
The Puligny-Montrachet Premier Cru Les Folatières is the largest Premier Cru vineyard in Puligny-Montrachet. It borders some of the famous Grand Cru vineyards such as Chevalier-Montrachet and Bienvenues-Bâtard-Montrachet. The vines are about 50 years old. After manual harvesting and a strict selection in the vineyard, the winemaking process is carried out with minimal intervention. The alcoholic fermentation in oak barrels occurs naturally through the native yeasts. The maturation in French oak barrels (with an average of 30% new wood) lasts almost 12 months, before it is further aged for 6 months in tanks.
Our tasting note
The Puligny-Montrachet Premier Cru Les Folatières has a straw-yellow color with golden highlights. On the nose, the wine presents expressive aromas of white flowers, ripe lemons, and flint. On the palate, it is balanced, fresh, and round, with flavors of white peach and apricot. It is a great wine for aging, but can also be wonderfully enjoyable in its youth.
Alain Chavy
Together with his brother Jean-Louis, Alain Chavy gained his winemaking experience at the family estate, Gérard Chavy et Fils, in Puligny-Montrachet on the Côte de Beaune. When their father retired in the late 1990s, the two brothers decided to divide the parcels between them and establish their own businesses. Thus, in 2003, Domaine Alain Chavy was founded in the heart of Puligny-Montrachet. Today, the 6.5 hectares of vineyards are managed according to the principles of Lutte Raisonnée, which limits the use of chemicals and pesticides. Alain Chavy is the proud owner of one of the few underground cellars in the village, where he vinifies his wines. With their purity, elegance, and pronounced minerality, the wines perfectly reflect the terroir.
