Winemaking
The blend consists of Pinot Noir, with vines planted in 1922, and the vineyard’s soil is rich in clay and limestone, which contributes to the wine’s unique quality. After destemming, the must undergoes cold maceration for 3 to 5 days to optimally extract the color and aroma of the grapes. Fermentation occurs 100% naturally and lasts between 18 and 21 days in stainless steel tanks. For aging, a maximum of 30% new oak barrels are used, and the maturation period varies between 16 and 18 months depending on the vintage. The wine is bottled directly at the winery, without fining or filtration.
Our tasting note
Bright ruby red. On the nose, a seductive bouquet of ripe red fruits unfolds, harmoniously complemented by fine spicy notes. Subtle wood and smoky nuances add depth to the aroma. On the palate, the wine is round and elegant with impressive length. Silky tannins caress the palate, providing a smooth drinking experience. The crisp finish leaves a lasting impression and invites another sip – a masterful interplay of fruit, spice, and structure!

Lucien Boillot... A big name from Burgundy that you may not be familiar with, as 85% of his bottles are exported abroad. Lucien represents the sixth generation of a winemaking family originally from Volnay. In 1950, the winemaker settled in the heart of Gevrey-Chambertin and began acquiring his first vineyards in the prestigious terroirs of the Premiers Crus. In the 1980s, the estate experienced significant growth thanks to the acquisition of several parcels and the inheritance of most of the Côte de Beaune appellations from his father. Back then, people spoke of exceptional terroirs for exceptional wines, located on both coasts and in the most renowned sites, especially in Pommard, Puligny-Montrachet, and Nuits-Saint-Georges. Today, Pierre Boillot has taken over from his father Lucien, who believed that «a great wine is something liberating.» This is an estate worth (re)discovering and keeping a close eye on, as, as you’ve likely noticed, its cuvées are exceptionally rare!
