Winemaking

All of the three types of vines are processed individually and fermented over 2 weeks at 25 to 27 °C in steel tanks. The wine matures for 12 months in barriques, followed by 6 months of maturing in bottles.

Our tasting note

Ruby red colour with mild garnet red highlights. The bouquet is characterised by a mature aroma of red fruit such as plums and cherries. The wine is harmonious, juicy and compact on the palate with an unmistakable hint of saffron. It has a long, bold finish.

Winemaking

Fermentation over roughly 10 days with subsequent acid degradation. The wine matures for 20 months in French barriques, before being bottled and aged for a long time in bottles.

Our tasting note

A deep, dark ruby-red colour characterises the Lagrein Riserva. Complex, fruity-tangy aromas of red berries and plums, dried figs, including some chocolate and a light smoky note. This fantastic grape demonstrates its quality by means of robust tannins and a distinctive, strong structure in connection with smooth, soft richness. A refined interplay between juiciness and bite and a long- lasting finish.

Winemaking

After gentle pressing and static clarification, the fermentation takes place at a controlled temperature of 20 °C and long yeast contact after fermentation. 15 percent of the Chardonnay is fermented in French oak barriques and matures for 5 months. The assembling takes place in spring.

Our tasting note

The Chardonnay Cardellino has an intensive straw-yellow colour. Ripe exotic fruits, some lime-tree blossoms and honey give the wine its complex nose. The Chardonnay is full-bodied and structured, juicy and harmonious with a subtle softness. With a long and elegant finish.

Winemaking

The Arneis that originates from the Daivej vineyard is fermented under temperature-controlled conditions and then aged in stainless steel tanks.

Our tasting note

The Arneis has a subtle, straw-yellow colour and exudes an aroma of exotic fruits, apples and mulberries. Wonderfully fruity on the palate with a fresh, acidic flavour. Hardly any other wine is more suitable as an aperitif and as an introduction to the opulent and delicious Piedmont cuisine.

Winemaking

Fermentation is carried out over 4 weeks at a controlled temperature of between 16 and 18 °C in steel tanks. The Rossj-Bass then matures for 6 to 7 months in slightly used barriques.

Our tasting note

The Rossj-Bass has a fine floral aroma with a hint of citrus fruit and light notes of honey. It has a remarkable depth of taste, and is very elegant on the pallet with a robust body and pleasant freshness. Mineral, full-bodied finish. Very good storage suitability.

Winemaking

Following gentle pressing of the grapes, controlled fermentation takes place in stainless steel tanks. The base wine is then decanted to the bottle, where the second fermentation takes place on the lees for 30 months. Once the yeast has been removed (dégorgement), the necessary dosage is added to the wine.

Our tasting note

Brilliant straw yellow. Delicious Millesimato with fine and enduring perlage. Broad, complex and deep on the nose with notes of yeast, freshly baked bread and delicate floral notes, all accompanied by aromas of ripe citrus fruits. The palate is complex, full-bodied, elegant and intense, with a lively structure and a very long-lasting mineral finish.
